What’s for Dinner? Steak Fajitas

If I am on top of my weekly menu, this question doesn’t bother me at all.  If I am having an ‘off week’ and I have no idea what I’m making for dinner, this question will send me into a tailspin {so don’t ask!}

So let’s talk about what’s for dinner tonight:  Steak Fajitas.




  • 1 1/2 lbs steak
  • 1 large green bell pepper, sliced thin
  • 1 large red bell pepper, sliced thin
  • 1 large yellow onion, sliced thin
  • Marinade (below)
  • Flour Tortillas
  • Sour Cream
  • Shredded Cheese

Marinade: (from my favorite cookbook, Betty Crocker)

  • 1/4 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Combine all ingredients for Marinade in a gallon Ziploc bag or shallow dish; add meat and allow to marinate for several hours.  Grill until desired done-ness.  Meanwhile, add 2 Tbsp. marinade mixture to a large skillet.  Add peppers and onion and saute until crisp tender.  Remove meat from grill and slice thin; add to skillet.  Stir gently.  Add additional marinade to skillet as desired.  (Make sure marinade reaches a boil).  Serve in warm tortillas, topped with sour cream and shredded cheese.

**Alternate Cooking Method:  Instead of grilling the steak, slice uncooked steak into thin strips before marinating.  Marinate for several hours.  Cook in large skillet, adding peppers and onions after meat has browned.  Serve in warm tortillas with sour cream and shredded cheese.
